审校 | Skin说起巧克力,你会想到什么?情人节礼物?超级能量棒?还是吃多了会流鼻血?最近,一些外国巧克力厂商把主意打到了它的药用价值上,希望官方能批准他们在巧克力的外包装上加上“有利于心血管健康”的字样。这又是怎么回事?巧克力的主要原料是可可豆,炎热、多雨的环境最适合可可生长,它主要分布在赤道南北纬20度以内的地区,产地有中南美洲、西非和东南亚。视觉:可可种类繁多,颜色从红色到深棕色变化多样。
嗅觉:可可中含有600多种芳香化合物,从酸涩的浆果风味到甜美的花香风味应有尽有。当你打开一条巧克力的包装,就会闻到那股气味。巧克力在舌尖上融化后,从咽部翻上来的香味更加浓郁。
听觉:掰开巧克力时会发出“啪”的一声,从这个清脆的声音中,你就能知道巧克力经过了加热后再冷却的过程。
触觉:巧克力的质地摸上去光滑吗?太光滑的巧克力可能是额外添加了可可脂。
味觉:让融化的巧克力布满味蕾,你会首先品尝到以酸味为主的味道,然后是水果味和类似泥土的味道。
